Chicken shawarma bowls

  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup tahini sauce

Instructions

  1. In a bowl, mix olive oil, cumin, paprika, turmeric, garlic powder, onion powder, salt, and pepper.
  2. Add the sliced chicken to the marinade and let it sit for at least 30 minutes.
  3. Cook the marinated chicken in a skillet over medium heat until fully cooked, about 6-8 minutes.
  4. Prepare the rice or quinoa according to package instructions.
  5. In serving bowls, layer the cooked rice or quinoa, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, and parsley.
  6. Drizzle tahini sauce over the top before serving.
