Chicken Scampi with Garlic Parmesan Rice

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Cook rice in chicken broth according to package instructions.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken until golden and fully cooked.
  4. Remove chicken and set aside. In the same skillet, melt butter and sauté garlic until fragrant.
  5. Stir in cooked rice, parmesan cheese, and red pepper flakes. Mix well.
  6. Slice chicken and serve over garlic parmesan rice. Garnish with parsley.

Notes

  • Use freshly grated parmesan for best flavor.
  • Adjust red pepper flakes to your spice preference.
  • For extra richness, add a splash of cream to the rice.
