  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground chicken over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, and Italian seasoning.
  4. Bring the mixture to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer until the noodles are tender, about 10-12 minutes.
  6. Stir in the ricotta cheese and half of the mozzarella cheese until melted and combined.
  7. Serve hot, garnished with the remaining mozzarella and Parmesan cheese.
