A comforting and hearty cheesy lasagna soup that combines all the flavors of traditional lasagna in a warm, delicious bowl.

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups uncooked pasta (lasagna noodles, broken into pieces)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in crushed tomatoes, beef broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until pasta is tender.
  5. In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
  6. Serve the soup in bowls, adding a dollop of ricotta cheese on top.
  7. Sprinkle with shredded mozzarella and grated Parmesan before serving.
