Carrot Ginger Turmeric Soup

  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add chopped carrots, ginger, and turmeric, and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 20-25 minutes until the carrots are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and pepper to taste.
