  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the garlic and cook for another minute.
  3. Stir in the chopped cabbage and cook for 5 minutes.
  4. Add the diced tomatoes, vegetable broth, thyme, salt, and pepper.
