  • 1 medium butternut squash, peeled and cubed

  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
