  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole wheat flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a blender, combine cottage cheese, cocoa powder, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract. Blend until smooth.
  3. In a separate bowl, mix together baking powder, salt, and whole wheat flour.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before cutting into squares and serving.

Notes

  • For a richer flavor, add chocolate chips to the batter.
