Ingredients

  • 4 large eggs
  • 1/2 cup cherry tomatoes
  • 1/2 avocado, sliced
  • 1/4 cup baby carrots
  • 1/4 cup cucumber, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Place the eggs in a pot and cover them with water.
  2. Bring the water to a boil over medium heat.
  3. Once boiling, cover the pot and remove it from heat. Let it sit for 9-12 minutes.
  4. After the time is up, transfer the eggs to an ice bath to cool.
  5. Peel the eggs and slice them in half.
  6. Assemble the snack box by placing the boiled eggs, cherry tomatoes, avocado slices, baby carrots, and cucumber in a container.
  7. Drizzle with olive oil and season with salt and pepper if desired.
