  • 1 onion, chopped

  • 23 chipotle peppers in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup apple cider vinegar
  • 2 cups beef broth
  • Tortillas for serving
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a slow cooker, combine the beef chuck roast, chopped onion, minced garlic, chipotle peppers, cumin, oregano, salt, and pepper.
  2. Pour in the apple cider vinegar and beef broth.
  3. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  4. Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
  5. Warm the tortillas in a skillet or microwave.
  6. Assemble the tacos by placing the shredded beef on the tortillas and topping with fresh cilantro and a squeeze of lime.
