  • 2 tablespoons cornstarch
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 teaspoon honey
  • 1 teaspoon lime juice
  • 1 tablespoon chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the potato wedges with cornstarch, paprika, garlic powder, salt, and black pepper.
  3. Drizzle with vegetable oil and mix until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, flipping halfway, until crispy and golden.
  6. In a small bowl, mix mayonnaise, sriracha, honey, and lime juice.
  7. Drizzle the sauce over the cooked potatoes.
  8. Garnish with chopped green onions and serve immediately.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Adjust sriracha to control the spiciness.
  • Use an air fryer at 400°F (200°C) for 15-18 minutes if preferred.
