  • 1 ripe avocado
  • 2 large eggs
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes (optional)
  • Lemon juice (optional)

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, bring a small pot of water to a boil and gently add the eggs. Cook for about 6-7 minutes for soft-boiled eggs.
  3. Remove the eggs from the pot and place them in cold water to stop the cooking process.
  4. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and add salt, pepper, and lemon juice if desired.
  5. Spread the mashed avocado evenly on the toasted bread.
  6. Peel the eggs and slice them in half. Place the egg halves on top of the avocado toast.
  7. Sprinkle with red pepper flakes if desired and serve immediately.
