Al pastor tacos are a delicious Mexican dish made with marinated pork, pineapple, and fresh toppings, served in soft corn tortillas.

  • 2 lbs pork shoulder, thinly sliced
  • 1/2 cup pineapple juice
  • 1/4 cup white vinegar
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup diced pineapple
  • 1/2 cup chopped onion
  • 1/2 cup chopped cilantro
  • 12 small corn tortillas

Instructions

  1. In a bowl, combine pineapple juice, white vinegar, garlic, chili powder, cumin, oregano, salt, and black pepper to create a marinade.
  2. Add the sliced pork to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat a grill or skillet over medium-high heat.
  4. Remove the pork from the marinade and grill for about 5-7 minutes on each side until cooked through and slightly charred.
  5. Let the pork rest for a few minutes, then chop into small pieces.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Assemble the tacos by placing the chopped pork on the tortillas, then topping with diced pineapple, chopped onion, and cilantro.
  8. Serve with lime wedges on the side.

Notes

  • For extra flavor, marinate the pork overnight.
