2 large sweet potatoes
1/4 cup maple syrup
1/2 cup pecans, chopped
1/4 cup butter, melted
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Salt to taste
Instructions
Preheat the oven to 400°F (200°C).
Wash and pierce the sweet potatoes with a fork.
Bake the sweet potatoes for 45-60 minutes until tender.
Once cooked, let them cool slightly, then cut them in half lengthwise.
Scoop out some of the flesh, leaving a small border.
In a bowl, mix the scooped sweet potato flesh with maple syrup, melted butter, cinnamon, nutmeg, and salt.
Fold in the chopped pecans.
Fill the sweet potato halves with the mixture.
Return to the oven and bake for an additional 15 minutes.
Serve warm and enjoy!
Notes
For a vegan option, substitute butter with coconut oil.
Adjust the sweetness by adding more or less maple syrup.
